Wy’s Wing Sauces

 www.wyswings.com

I have heard really good things about this sauce over the last few months and was really looking forward to sinking my teeth into a good wing sauce. As I found out right away Mark is very passionate about cooking his wings as you can see from his website. Over my eating career I have had wings made several different way. Baked or fried.. Chicken is chicken. I believe that if you start with good chicken it’s pretty hard to mess up. What makes a great wing is the sauce itself. I was really looking forward to doing some good things with the product line that he sent me.

First up is the the Medium.I’m not really sure why,but I always go for the Medium first. All the wings that I will be sampling today will be baked. I like my wings the way I like them so I see no real reason to change now. I’m sure I can learn a thing or two from Mark about cooking them but all about the sauce at this point. So lets get started….

Ingredients list…Aged Cayenne Peppers,Water
Peppers,Vinegar,Soy bean Oil,Salt,Cooking Sherry,
Garlic,Modified Food Starch.Spices,calcium Chor.
and Sodium Benoite.
                     Allergens….Contains Soy

We started out by sampling a spoonful from the bottle. You can always pick out the taste of Aged Cayenne Pepper. I was expecting more of a vinegar taste with this sauce but was please to find just the right balance of water to cut down it way down. We both agreed that you can definitely pick up on the cooking sherry followed by a nice blend of garlic and other fun spices. So off to the kitchen we go to season up some wings and things. As I had told you earlier I will be baking my wings. With all the chicken in the oven it is time for a much needed drink as we sit and wait.

So after a few drinks it was time to take these babies out and get them sauced up. When I coat wings I like to put them in a big shaker jar and mix them up good. Another little tip is leaving them sit for a spell in the sauce so that it gets a chance to soak into the whole wings and not just on top. By this time my mouth was watering .Great great smell of the sauce going over the wings. As you can see from the picture this sauce really sticks

When we were done with the wings it was hard to find any chicken on the bone. Letting the wings sit in the sauce awhile really bring out the flavor of the sauce all threw the wing. I found that there was not that much heat present at all. My friend Vic on the other hand felt that the heat was just enough for him. I started out the review with hopes of trying a really good wings sauce and found out that i stumbled across a great one.I strongly feel that the mix of aged red peppers with the cooking sherry ad to the overall flavor of this sauce. Its is not everyday that you come across a “Must Have“wing sauce but today my friends I have found a great one. This fat bastard has been eating wings for many years now and I would put this sauce in my top five sauce that I have ever had. So if you are looking for a great sauce to use at your upcoming Super Bowl party look no further….

After the medium didnt meet my expectations in the way of heat (still LOVED the flavor though) … We both agreed that would would open the Wy’s guy sauce next. By this time we enjoyed the medium so much we are running low on wings

Ingredients..Aged red cayenne peppers,water,Habanero peppers,Vinegar,Soy bean oil,cooking sherry garlic,spice

Using the same process as we did with the first batch we tost them and let them sit. Once again the balance of the water with the vinegar was perfect. The spice were harder to pick up this time due to the fact of the heat. Right away you get the heat. You get that hint of sherry followed by little pieces of peppers all through out the sauce. You can tell by the intense way Vic is looking at his wing that this is a sauce that will bring the heat. What I always have like so much is to bring someone new into my review, especially when they really don’t have much of a heat tolerance. Hell what better way to judge heat..

A few word for Vic…….I like to taste my sauce before it get a good burn. From the point of view of someone who’s heat tolerance is low this sauce was hot. The Wy’s guy by far was the hotter of the two. Both had that same great flavor  but your can really tell the difference in the heat. One thing that i wanted to bring up is this was the first time I had cooking sherry in  a wings sauce. I was very surprised what a difference this makes in the overall taste of a sauce.

As you can see the wings were soaked in sauce. This sauce has no problem adhearig to the wings. What I enjoyed most about this sauce was the little pieces of pepper. Each piece brought and extra kick of heat to every bite. So far Mark is two for two.

After setting our mouths on fire with Marks last sauce we where think about something sweet. Digging through the box we found WYSDOM“.

Ingredients.. Aged Cayenne Peppers,Water,Vinegar Sugar,High Frutose corn syrup,Salt,Jalapeno Peppers,Tomato paste,Soy bean oil,Food Starch,lemon juice,Tumeric,Sherry wine,Garlic and spices.

Right away you can tell that there is syrup present!! Right away….Then you start to get some heat not much but some. As in the last two sauces the water and vinegar mix is on the money. I love the fact that you get chunks of peppers mixed in the sauce. After a few wings and a few chunks of peppers this sauce starts to get hot. If you are fan of sweet wings with some decent heat this sauce would be a must try for you.

I would like to thank Mark for givening Peppers and More the opportunity to review his products. I have reviewed three of what I feel are his strongest sauces . I have been around wings and wing sauce many years and I have to put Wy’s Medium wings sauce right up there with the top wing sauce makers today.. We used over 65 wing in this review and not one was let when we where done. Peppers and More highly recommends this sauce.
