“It’s the Jerk Mon”

 Let’s pour ourselves a nice cool rum punch and put in the Bob Marley CD. We are going to travel to a nice sunny beach and experience a Jamaican Jerk food sensation. Jerk is a process of seasoning and grilling meats, seafood and vegetables. The seasoning is a unique spicy, sweet and usually scorching hot blend of spices. Allspice and habanero are the prominent ingredients in jerk seasoning. “Heartbreaking Dawns” has created their version, called ‘Dr. Bird Jerk Blend’. We are going to use this spice blend on some pork and chicken to enhance our ‘Jerk’ experience.

 Ingredients,

 Onion, salt, black pepper, allspice, ginger, nutmeg, thyme, red pepper and dried habaneros are listed. I am a little surprised that sugar or any other sweeteners are not included.

 Aroma and Texture

 Wow, this was the first sign that Dr. Bird Jerk Blend is a winner. Once the cap is removed the wave of aroma rolls and breaks to your senses. You know these spices are fresh because they are so aromatic. You can almost identify specific ingredients. I could smell the allspice and black pepper. The spices were coarsely ground with pepper seeds and flakes present.

 Taste

 Jerk seasoning has a unique flavor profile. The combination of allspice, ginger, nutmeg, thyme and peppers hit the spot of jerk flavor. The first four ingredients will hit your tongue first. A medium pepper glow will follow. The real test will come with the food.

 Heat

 Habanero powder and red pepper combine to bring the heat level to 2.5 out of 5 on the heat scale.  This medium heat level will appeal to most backyard cookers.

 

Taste on Food

 Most people associate jerk cooking with chicken. This was our first choice and we were not disappointed. This chicken had a hot sweet spicy flavor. I would have sworn that there was a little sugar in this spice mix because of the flavor. This combination of spices coaxed the sweetness of the meat. The smoke of the grill enhanced this spice rub to create a Jamaican flavor treat. We were so thrilled with the flavor we had to try this rub with pork chops. Once again we were transported to that Jamaican beach to experience the jerk.

 The graphics are eye-catching but a little scary. There are two skeletons that are on fire praying to a pepper.

 Overall

 ‘Heartbreaking Dawns, Dr. Birds Jerk Blend’ has captured the Jamaican jerk flavor in a wonderful rub. The freshness of the ingredients is obvious as soon as you remove the cap and the aroma rises. This rub on grilled meats will have you on a Jamaican vacation taste treat. I liked the flavor so much; I used it to top and garnish a cheese pizza. We will have to try it on some vegetables next. This is a keeper. “It’s the Jerk Mon”

    I like the idea of a Jerk Blend that is not super hot, as it makes it easier to cook a dish that will be enjoyed by a group of people. :wink:

  4. Thanks for the review!!! I’m happy you got the package ok. We just re-released the rubs in a 9oz container that should be on the site soon. I like to use a little bit of honey and vinegar with a dash of soy to make Dr. Bird into a paste, and then slow roast the chicken covered in the oven. If we use it as a straight rub on the grill with drums or something we use the Mango sauce 1to3 with plain yogurt, diced scallion and some white sugar for a lil’ dipping addition! We are getting ready fro some new grilling sauces so i’ll make sure to get you out some more samples!!

  6. yes, the honey with the rub sounds just about right. I always associate good jerk rub with some sweetness so was concerned when i read the ingredient list.

    But you can always add your own, and honey is a great pick.
