BUTCHER BBQ HONEY RUB

My wife and I have been ‘Kansas City Barbeque Society’ certified barbeque judges for the last three years. A couple  weekends a month we travel to barbeque competitions, all around the West Coast to sample, judge and score competition barbeque. We have judged at the American Royal competition held in Kansas City Missouri. This competition brings over 500 teams from all over the country. I can honestly say I have tried many different flavors and brands of dry rub for barbeque. There is one company that has a solid reputation for its meat injections and dry rubs.  This company is ‘Butcher BBQ”. These products used with proper techniques can make a barbeque competitor ‘Take the Walk’ (Win). Today we are privileged to try their Honey Rub. ‘Butcher BBQ Honey Rub’ is MSG free. This product claims to be able to infuse honey flavor without burning on the grill. This spice mix will be used on a smoked pork shoulder. As ‘Butcher BBQ’ states; “Trust Your Butcher”.

 Ingredients:

Sugar, salt, honey powder (refined syrup, honey), spices including paprika, dextrose, dehydrated garlic, celery and no greater than 2 percent silicon dioxide to prevent caking, and spice extractives, are the listed ingredients. I am intrigued by the refined syrup and honey mix.

 

 Aroma & Texture:

 This mix smells of paprika, garlic and is not overly fragrant. The real test will be in the cooking. The texture is of small tight granules that have an orange hue.

 Label:

 A twelve ounce plastic container with the Butcher Boy insignia announcing the flavor of Honey Rub contains this rub. The top has a convenient pour/shake feature.

 

Food:

 I like a little sweetness on pulled pork and hopefully this rub should do the trick. A pork shoulder was rubbed with the honey rub and put into the refrigerator overnight. This gave it plenty of time to do its magic. A “Weber Smokey Mountain” smoker was brought to temperature and apple wood chunks were added. After a couple of hours of smoking, this roast was removed and placed on foil. Some liquid and more of the honey rub was applied. This packet was wrapped and returned to the smoker to finish the cooking.  Sometimes you just want to preach to the choir. Hallelujah! We have ‘taken the walk’ in our own backyard. This is one of the best tasting pork shoulders that ever crossed our paths. The combination of smoke and rub created a bark that was pure meat heaven. This outer layer of meat was smoky with a not overpowering sweetness that I would happily call meat candy. The interior of our roast was moist and tender.  This rub was the right combination of salt and spices with the added bonus of honey

Overall;

Our roast was caramelized a beautiful sweet mahogany color. This was achieved with refined syrup and honey in ‘Butchers BBQ Honey Rub’. Sometimes sugar or honey will burn with high heat. The mix of spices created a flavorful and honey flavored bark on our shoulder roast. This was a memorable meal. We scored this backyard barbeque entry nines across the board. We now know why barbeque competitors love their products. We are looking forward to trying this on some chicken. Butcher BBQ makes several other rubs and we will be trying them soon. Stay tuned.

  4. how long would you barbecue 15lbs pork shoulder divided in two pieces? I appreciate. I always do pork shoulder on over, never done on barbecue.

  5. Sandra…. If there is a bone in one have you know that one will cook faster..All meat is different thats why i have become best friends with my therm. Depending on how high you are cooking it as for how long it will take.Personaly i would cooke that bad boy on low and rotate for about 4 hours…but that me…just keep an eye on it and you will be fine…
