“It’s the Jerk Mon”
Let’s pour ourselves a nice cool rum punch and put in the Bob Marley CD. We are going to travel to a nice sunny beach and experience a Jamaican Jerk food sensation. Jerk is a process of seasoning and grilling meats, seafood and vegetables. The seasoning is a unique spicy, sweet and usually scorching hot blend of spices. Allspice and habanero are the prominent ingredients in jerk seasoning. “Heartbreaking Dawns” has created their version, called ‘Dr. Bird Jerk Blend’. We are going to use this spice blend on some pork and chicken to enhance our ‘Jerk’ experience.

Picked up this little package up At Peppers at the beach and have been playin around ever since. No secret I am A sucker for a good Pepper combo and this packs a big punch.Not the hottest that I have had but sure adds some great taste to my burgers.This is a combo of 11 Different chili peppers followed by the one and Only Bhut Jolokia.No Salt or MSG added……

Moses Pennell has an old Texas family rub recipe (sounds like many a story you’ve already heard, eh?) and as a pitmaster he serves it up on BBQ aplenty for The Texas Pick-Up, a catering and delivery business that serves a large portion of the Southern California area.
Moses has asked me to take a gander at his trademark spice seasoning, called Texas Pick-Up Que Rub, to see what my opinions are of it…

I am a member of the ACF, (American Culinary Federation). At our monthly meeting, I was given a bottle of this spice. One thing that is really cool about this particular bottle of spice is that it was created as a fundraiser for the earthquake survivors of Haiti. I was checking out the website, and they offer 7 different spice blends all at a low price of $5 each. They also had this to say about this spice blend.
