Weekly Firecast Episode 8 – Interview with Wicked Cactus Sauce
This week’s video installment consists of an interview with sauce maker Chris Bintz and his business partner Mike Isenberg of Wicked Cactus Sauce. As you may remember, I reviewed their Head Hunter’s Paradise Hot Sauce a few months ago and it immediately became one of my favorite new products of the year.
I was recently given the opportunity to visit with the guys on afternoon. Chris had made some killer ghost pepper-glazed spare ribs and some delicious shrimp tacos for us to chow down on, and we talked extensively about the fiery foods business. When that was said and done, we all sat down in front of the camera together where I asked them what the origins of Wicked Cactus were as well as where the future of the new company might be headed. A big thanks goes to Chris and Mike for their hospitality and generosity and I look forward to speaking with them again in the near future at other fiery foods events.

Interview with Nick Lindauer of Hot Sauce Blog
If you’ve been a chilehead and have been scouring the web in the last five years in search for any information on your passion, you know about the Hot Sauce Blog. There have been numerous other websites and blogs spotlighting fiery foods that had popped up over the chilehead nation’s landscape, but it was HSB that attracted the masses of spicy food devotees like no other. Through product reviews and hot sauce news, it garnered the attention of industry veterans and average joes, where both groups convened to become one large, friendly community of readers and commenters.
The man behind the HSB was Nick Lindauer. Not only was he a die-hard chilehead with a drive to have quality material posted daily to his blog, but he had experience in internet marketing that helped build HSB’s initial audience.
Then in the Fall of 2008, Nick had ceased all blogging operations and revamped the format of HotSauceBlog.com into a membership-only site, where only those who had approved accounts could post updates or participate in forum discussions. Since then, Nick has turned his focus away from the HSB completely, and instead put his full attention towards happenings in the his personal and professional life.
Many have wondered what Nick has been doing for the nearly two years since leaving the Hot Sauce Blog. Well, there are finally some answers. Nick graciously agreed to respond to a few questions from Doug Spiros of Peppers and More and Scott Roberts of ScottRobertsWeb.com in this exclusive interview. Interview with John Dilley of Defcon Sauces

Purveyors of some of the mightiest wing sauces on the planet and mainstays at hot sauce trade shows, Defcon Sauces owners John “The Creator” Dilley and his wife Maggie “The Createss” have racked up an impressive array of awards for their fiery products and have become a cult chilehead favorite. Eat some wings with a generous coating of one of their unique Defense Condition sauces and it’s highly likely they’ll become one of your favorites, too.

Interview with Blair Lazar

Whether or not you’re a fan of his products, you have to admit that few people have had the impact and garnered a cult-like following quite like Blair Lazar of Blair’s Sauces and Snacks. I was recently given the opportunity to have an extended conversation with Blair, and he was candid, gushingly accommodating and extremely passionate as we spoke. We touched on several topics, including his reserves (which struck a nerve when I mentioned some were critical of the prices for which they were being sold), being on the internet, his collaboration with rock guitarist Zakk Wylde on the Berserker Sauces, and the fiery foods business. Dave’s Insanity Sauce has the notoriety of not only once being the hottest sauce in the world in the 1990s, but it’s probably currently the most famous specialty hot sauce known by non-chileheads. Folks who aren’t heat freaks may be able to rattle off three or four “supermarket” pepper sauces like Frank’s, Tapatio or Tabasco, but when you press them about giving an example of a super-hot condiment, chances are they’ll name Dave’s Insanity more often than any other sauce.
It’s this distinction and mystique about Insanity Sauce that’s kept Dave near or at the top of the fiery foods game for over 15 years. But Dave’s Gourmet is far more than just their flagship product; Hirschkop’s company offers many other fine pepper sauces, plus pasta sauces, drink mixes, condiments, spicy snacks and more.
I was recently given the chance to speak with Dave to ask him a few questions. One might have expected a wild, gregarious man who once regularly wore a straightjacket to food shows and on the cover of his cookbook, Crazy from the Heat. Instead, Dave proved to be a genial, mild-mannered fellow. After talking with him, I was given the impression that Dave would rather focus on making his company a diverse brand of gourmet food products (“more of a Trader Joe’s or Paul Newman’s” in his words) than just being makers of scorchingly hot products, something that would differentiate himself from peers such as Blair’s of CaJohn’s.
